Ingredients:
- 1 lb broccoli
- 2 garlic cloves, minced
- 1 lb boneless, skinless chicken breasts, cubed
- 1/2 cup apricot jam
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 1/2 tsp. salt
- Dash of pepper
- 1/2 tsp. dried thyme leaves (optional)
Directions:
- Heat oil in nonstick skillet over medium-high heat. Add the chicken pieces; cook and stir for about 3 min. Add broccoli and garlic. Stir fry for 1 minute, cover, reduce heat to medium and cook for 4-5 minutes until broccoli is crisp tender.
- In small bowl, combine apricot jam, lemon juice, salt, pepper, and thyme. Pour over chicken mixture and stir to mix well. Cook for 2-3 minutes longer and serve over hot cooked brown rice.
