Whipped Sweet Potatoes

Total prep/cook time: ~45 min. Serves 4.

*Vegetarian; gluten-free
















Ingredients:

  • 4 large sweet potatoes, peeled and chopped into 1" cubes (about 7-8 cups)
  • 1 large Granny Smith apple, cut into 1" cubes
  • 2 tbsp coconut oil
  • 2 tsp cinnamon
  • 1/4 tsp allspice
  • 1/2 tsp salt

Directions:

  1. In a large saucepan, combine sweet potatoes and apples. Cover mixture with cold water by 1 inch. Bring to a boil over medium-high heat and then reduce for a simmer, cooking for 20-25 min or until soft. Remove from heat. Reserve about 1 cup of cooking liquid, then drain well.
  2. Return mixture to pan and add coconut oil, salt, cinnamon, and allspice. Stir and then blend with an immersion blender until smooth, adding reserved liquid by the tablespoon as necessary. Alternatively, you can mash with a potato masher or blend in a blender/food processor.
