Baked Egg and Avocado Tostadas

Total prep/cook time: ~25 min. Serves 4.

*Vegetarian; gluten-free

Ingredients:

  • 8 corn tortillas
  • 1/2 cup salsa
  • 2 avocados, sliced into ¼”-1/2” slices
  • 8 eggs
  • 4 oz goat cheese

Directions:

  1. Preheat oven to 400˚.
  2. Toss tortillas in oven and bake until slightly crisp, 5-6 minutes. Remove from oven and place on a non-stick baking sheet. Smear on salsa and place avocado slices around outer edge of tortilla, leaving a well in the middle.
  3. Crack an egg into center of each tortilla and sprinkle with goat cheese.
  4. Bake until egg is set, 5 to 10 min (depending on desired firmness of the yolk).
