Red Pepper & Goat Cheese Frittata

Total prep/cook time: ~40 min. Serves 4.

*Vegetarian; gluten-free
















Ingredients:

  • 4 large eggs
  • 2 large egg whites
  • 1 red bell pepper, sliced
  • 1 bunch green onions, trimmed and sliced
  • 4 oz crumbled goat cheese
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp finely chopped fresh oregano
  • ½ tsp salt
  • ¼ teaspoon freshly ground pepper
  • Cooking spray

Directions:

  1. Preheat oven to 350 degrees. Spray 8-inch round cake pan with cooking spray.  Set aside.
  2. Whisk eggs, egg whites, oregano, salt and pepper in a medium bowl. Heat oil in a large nonstick skillet over medium heat. Add bell pepper and scallions and cook, stirring constantly, until the scallions are just wilted, 30 seconds to 1 minute.
  3. Layer the vegetables and goat cheese in the cake pan. Pour over egg mixture; bake 30 min or until eggs have set. Let rest for about 5 min before serving.
