Ingredients:
- 4 large eggs
- 2 large egg whites
- 1 red bell pepper, sliced
- 1 bunch green onions, trimmed and sliced
- 4 oz crumbled goat cheese
- 1 tbsp extra-virgin olive oil
- 2 tbsp finely chopped fresh oregano
- ½ tsp salt
- ¼ teaspoon freshly ground pepper
- Cooking spray
Directions:
- Preheat oven to 350 degrees. Spray 8-inch round cake pan with cooking spray. Set aside.
- Whisk eggs, egg whites, oregano, salt and pepper in a medium bowl. Heat oil in a large nonstick skillet over medium heat. Add bell pepper and scallions and cook, stirring constantly, until the scallions are just wilted, 30 seconds to 1 minute.
- Layer the vegetables and goat cheese in the cake pan. Pour over egg mixture; bake 30 min or until eggs have set. Let rest for about 5 min before serving.
