Did you know?
Even though more attention
has been sometimes been given to their delicious oil than their whole food
delights, olives themselves deserve to be recognized as well. While a high-fat
food (about 80-85% of the calories in olives come from fat), almost
three-quarters of the fat in olives comes in the form of monounsaturated fat.
The high monounsaturated fat content of olives has been associated with reduced
risk of cardiovascular disease. However, because they are high in fat as well
as sodium, use olives sparingly to give your dishes a pop of Mediterranean
flavor!
