Balsamic Chicken Salad


Total prep/cook time: ~10 min. Serves 4.
















Ingredients:

  • 2 cups diced rotisserie chicken (found in deli)
  • 4 cups mixed salad greens
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 1/2 cup chopped olives, drained
  • 1/4 cup light balsamic dressing
Directions:

  1. Mix all ingredients together in a bowl. Serve with a fresh whole-grain loaf of bread.
