Chicken and Avocado Salad with Lime


Total prep/cook time: ~15 min. Serves 4.




















Ingredients:

  • 2 cups rotisserie chicken, shredded into large pieces (found in deli)
  • 2 medium avocados, diced
  • 2 tbsp fresh squeezed lime juice, divided
  • 1/4 cup thinly sliced green onion
  • 2 tbsp plain Greek yogurt
Directions:

  1. Shred the chicken apart until you have 2 cups of chicken shredded into fairly large chunks. Dice the avocados into medium-sized pieces and mix with 1 tbsp of the lime juice. Thinly slice the green onion. Mix Greek yogurt and 1 tbsp lime juice to make the dressing.
  2. Put the chicken into a bowl large enough to hold all the salad ingredients. Add the sliced green onions and dressing and toss until all the chicken is coated with dressing. Add the avocado and any lime juice in the bottom of the bowl and gently combine with the chicken. Gently mix into the salad, just until it is barely combined.
  3. Serve right away or chill for a while before serving. Serve inside whole wheat pita bread, on sandwich bread, or in crisp lettuce cups.
