Roasted Mushroom and Green Bean Farro Salad


Total prep/cook time: ~30 min. Serves 4.

Ingredients:

  • 1 cup uncooked farro
  • 8 oz mushrooms, sliced
  • 1 lb green beans, trimmed and cut into bite sized pieces
  • 1 tbsp olive oil
  • 1 tsp thyme, chopped
  • 1/2 cup feta or goat cheese, crumbled
  • 1/4 cup light balsamic vinaigrette
  • Pepper to taste
Directions:

  1. Heat oven to 400.
  2. Bring 2 cups water and farro to a boil, reduce the heat and simmer, covered, until the farro is al dente - about 20 min.
  3. Toss mushrooms and green beans in the oil, thyme, and pepper and place them on a baking sheet in a single layer.
  4. Roast the mushrooms and green beans in preheated oven until they begin to caramelize, about 20 min, flipping halfway through.
  5. Mix everything and enjoy.
