Ingredients:
- 1 cup uncooked farro
- 8 oz mushrooms, sliced
- 1 lb green beans, trimmed and cut into bite sized pieces
- 1 tbsp olive oil
- 1 tsp thyme, chopped
- 1/2 cup feta or goat cheese, crumbled
- 1/4 cup light balsamic vinaigrette
- Pepper to taste
Directions:
- Heat oven to 400.
- Bring 2 cups water and farro to a boil, reduce the heat and simmer, covered, until the farro is al dente - about 20 min.
- Toss mushrooms and green beans in the oil, thyme, and pepper and place them on a baking sheet in a single layer.
- Roast the mushrooms and green beans in preheated oven until they begin to caramelize, about 20 min, flipping halfway through.
- Mix everything and enjoy.
