Ingredients:
- 1 lb boneless, skinless chicken breast halves
- 2 tbsp lemon juice
- 4 medium zucchini squash
- 6-8 tbsp pesto, to serve
Directions:
- Slice the zucchini crosswise into ‘coins’ and cook in a non-stick pan over medium heat 5-6 min.
- Heat a pan on a medium-high heat. Cook chicken in the pan for 3-4 min on each side or until chicken is well browned and cooked through.
- While the chicken is cooking, mix lemon with pesto in a bowl.
- Serve chicken and zucchini with pesto mixture on top.
